Hello again! 
Back from a little vacation with my family. I love exploring new sights. We went to San Diego for me and the husband's dating anniversary (Valentine's Day) - 6 years. First time for us to go to Balboa Park, and trying out this cute little Mexican restaurant called Salud. Photos will be posted below. I have a class project due the end of this week, so I will try my best to record a new Vlog on my YouTube channel. I have been slacking, but that is life lol.

Since I was young, my dad always taught me to coupon and to hustle. Now that I'm older with my own family, it made me appreciate couponing, .99 store / Dollar Tree, etc. Thanks to Pinterest, and Instagram, there are many cool finds, and, DIY projects. 

This week I found these cool items via .99 Store. 


Tea light candles, journal - for all my thoughts, goals, etc. (it was 1.99, quality was good), and mustache tumblr. 

I love using the tea light candles for my oil burner, a pack of 16 for .99 cents is a steal! The tumblr, I have been using for my detox water drinks. :) 

Alright guys, I will be posting more bargain deals, my finds, and DIY projects.

Hi guys!!! I was craving chicken adobo, so I made this "Chopped" style - by finding ingredients with what I had already. My son got sick with cold, so we were pretty much stuck indoors for the past two days. I did some cooking and baking. :) I will be posting another recipe soon!!! 

Anywho this is what I was working with.

Recipe:

4 large organic chicken drumsticks 
  • 1 tbsp of olive oil
  • 6 pieces of raw garlic chopped or sliced (to your liking- I opted for thick slices because I love big chunks of garlic)
  • 1 small onion sliced1 green pepper diced ( added that optional touch)
  • ¼ cup rice wine vinegar (used what I had, you can use distilled white)
  • 1/3 cup of calamansi soy sauce (toyomansi brand - you can use any type of soy sauce, this is just a soy sauce that is mixed with a lemon/lime flavor, loved that extra kick)
  • 1/3 cup of water
  • 1 tsp of black pepper
  • Sprinkles of fresh rosemary ( I added that touch)
  • 3 small bay leaves 
Added garlic to oil olive in a medium pot, medium heat, let it simmer for a min or two. Then added the drumsticks, let it brown. Then added water, soy sauce, vinegar, rosemary, bay leaves, pepper, onions, and green pepper. Put a lid on it, and let it simmer for 45 mins. By the time is up, you will have this home cooked aroma of goodness!!  Oh my goodness, my mouth is watering lol. 
 
Easy recipe guys, and you can always add your touch based upon your liking. Sometimes I like to add red potato to make it more hearty, or use another protein instead of chicken. I will be back for more!

Hi guys! Trying to focus more on blogging/vlogging. I want to incorporate my DIY and cooking mama recipes.

Last week I tried a recipe (tweaked it a bit), I found on Facebook. You know what I'm talking about, when you see your friend's liking or posting those darn appetizing, easy, Facebook recipes. So I had to test it out.

This is green tea chocolate chip cookies. My version contains coconut oil, instead of butter. I also tried green tea matcha latte powder from Trader Joe's. By using this green tea mix, it allowed me to reduce the amount of refined sugar, and brown sugar because of the sweetness of green tea latte mix. It turned out to be a win-win! I am a matcha green tea addict, so definitely will be making more of these cookies. Eating it, will be in moderation. ;-)

Green Tea Chocolate Chip Recipe

1/2 cup coconut oil 
1/2 cup sugar
1/2 cup light brown sugar
7 tablespoons matcha (green tea) powder
1 large egg
1 teaspoon vanilla extract
1 1/3 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/3 cups bittersweet chocolate chunks, divided

I didn't chill the dough beforehand like recipe states, just put it right in the oven for 9 mins @ 350 degrees. 


What I like about this recipe, is you can tweak it to your liking. Instead of all-purpose flour, you can test out wheat flour, or even coconut flour, etc.
